Hy-Vee Tailgate Tips: Buffalo Chicken Meatballs

Midco Sports Network and the seven Sioux Falls Hy-Vee Stores have teamed up to provide Hy-Vee Tailgate Tips throughout the 2015-2016 sports season.  During every home SDSU and USD broadcast, on Midco SN, a Sioux Falls area Hy-Vee Chef will prepare something you can create for your guests when you watch the game.

Get great buffalo taste without all the mess with this easy meatball recipe. It's as easy as a meatloaf, with the flavor of wings!

BUFFALO CHICKEN MEATBALLS

  • 1lb. ground chicken
  • ¾ c bread crumbs
  • ¼ t salt
  • ¼ t pepper
  • ¼ c diced onion
  • ¼ c diced celery
  • ¼ c bleu cheese
  • 1 egg
  • ¼ sriracha or cayenne hot sauce.

Combine as if making meatloaf and shape into meatballs.

Place in prepared pan and bake @ 350 for 35-40 minutes for large meatballs, 15 to 20 minutes for small ones.

Remove from oven and sprinkle with bleu cheese crumbles.
